A prospective cohort study follows two groups of adults for 10 years to assess the association between diet quality (exposure) and incident coronary heart disease (outcome). One group consumes a high–saturated fat diet, and the other consumes a diet rich in fruits and vegetables. At the end of follow-up, the investigators calculate the relative risk of coronary heart disease for the exposed group compared with the unexposed group.
